


Ingredients :
1/4 cup heavy cream
1/4 cup milk
2 egg yolks
2 tablespoons white sugar
1 teaspoon brown sugar
1/4 fresh vanilla bean
Method :
preheat oven to 320-325F
Heat the cream and milk in a small sauce pan.
In a separtate bowl, whisk the egg yolks and sugar together. Then
add the hot cream and milk.
Pour the mixture into individual cups
and cook sitting in a pan of hot water for 20 minutes.
Cool in refrigerator. Sprinkle with brown and caramelize with a
propane torch or under the broiler.

Ingredients :

1 teaspoon green tea powder
1/2 lemongrass stick chopped
Method :
Same as Basic creme brulee above, but infuse hot cream and milk
solution with lemongrass and tea powder. Pass through a strainer
before mixing with the egg yolk and sugar mixture.
